My all-time favourite meal is Nigella's corned beef pie. It's what I'd choose as my last supper, it's my go-to choice when having friends over for a relaxed dinner, and even though it's a relatively simple meal, I could bang on about how amazing it is all day long.

It is, however, not too friendly on the waistline.

I haven't ever bothered to calculate the calories or the Syns, and to be frank, I don't want to know. It'd only upset me.

But in the interests of still being able to have a version of my favourite meal, I set myself a mission to create a lighter version that didn't compromise too much on taste or satisfaction.

And if I do say so myself, I excelled myself with this particular challenge.

My one Syn corned beef pasties contain just 329 calories each, and I dare bet that they'll quickly become a dinnertime favourite in your household…

What makes these Slimming World corned beef pasties so good?

I'm pleased you asked.

A common problem with corned beef pasties is that they're stuffed with a load of potato, which not only results in a fairly boring texture, but also makes the filling look fairly colourless and anaemic.

Taking a leaf directly out of Nigella's book, I set about making the filling much more exciting.

The addition of peas and carrots add bite, and then there's what I consider to be the secret ingredient… The tomato puree. Not only does this really bring out the taste, but it adds colour and makes it all the more visually appealing.

The only downside is that you'll never quite look at a shop bought pasty in the same way again.

What should you serve with your one Syn corned beef pasties?

These pasties are really filling, and I find that serving them simply with a side of mushy peas and a jug of gravy makes for a substantial meal.

So there's only one Syn in this recipe?

Yep, that's right.

As long as you're using a Weight Watchers wrap as your Healthy Extra B, then you only need to count one Syn.

If you're using a different brand of wrap though, be sure to check the Syns in advance – not all options can be counted as your Healthy Extra!

One Syn Corned Beef Pasties

These one Syn corned beef pasties are the ultimate in comfort food, and perfect for lunches, dinners, and the colder winter months.

Ingredients

  • 3 Weight Watchers wraps
  • 1 200g tin lean corned beef diced
  • 1 onion diced
  • 1 medium sized potato diced
  • 1 small carrot diced
  • 1 tsp sweetener
  • 1 tbsp tomato puree
  • 2 tsp Worcester sauce
  • 150 g frozen peas
  • 1 beef stock cube disolved in 200ml of boiling water
  • 1 egg beaten
  • Low calorie cooking spray

Instructions

  • Preheat your oven to 180 degrees.

  • Heat a heavy based pan over a medium to high heat, and spritz with low calorie cooking spray. Add the onion and fry for a few minutes until softened.

  • Add the potato and carrots, and cook for a further 5 minutes.

  • Add the Worcester sauce, sweetener, and tomato puree, and cook for a further 2 minutes.

  • Add the stock, corned beef, and peas, and stir well. Continue to simmer for around 15 minutes, or until the filling has thickened and potatoes and carrots are soft. Let the filling cool for a few minutes.

  • Spritz a baking tray with low calorie spray, and place wraps on top. Add filling to half of the wrap, being careful not to get it too close to the edge.

  • Brush the inner edge with beaten egg, and fold the wrap in half to form your pasty. At this stage, you'll realise that your wraps aren't exact circles - don't worry about this though! Use the back of a folk to crimp the edges together, ensuring there are no spaces for your filling to ooze out, and then brush with beaten egg.

  • Bake in the oven for 10-15 minutes or until golden brown. Remove from oven, turn over, brush the other side with beaten egg, and then return to the oven for 10-15 minutes. This ensures that both sides of your wrap are ready.

  • Serve and enjoy!
